When I was at the farm stand I saw some really great looking acorn squash. Not only did it look great it was very inexpensive! I decided to buy one and bake it up for a nice side dish. Not only is this recipe easy to make it is really great!
Baked Acorn Squash
Ingredients:
1 medium acorn squash, cut in half and seeded
1 tablespoon butter
2 tablespoons brown sugar
Preparation:
- Preheat oven 350 degrees F.
- Spray casserole pan with cooking spay. Place acorn squash cut side (orange side) touching the pan.
- Bake 35 minutes.
- Flip acorn squash over in pan, skin side touching the pan.
- Spread one half a tablespoon on the inside of each half. Sprinkle each half with one tablespoon brown sugar.
- Place back into 350 degree F oven and bake an additional 35 minutes.
